Just wondering if anyone might have some products or mechanisms they have an example of that can collapse, fold, or get smaller in a way they thought was cool.

Are you trying to find something in particular?

Have you checked on camping and survival stuff? It is full of examples of collapsible products.

I guess that convertible cars have some cool mechanisms too.

Nothing in particular. Pretty much anything that would help spark some ideas. Thanks!

a couple more:

Folding bicycles?
Mountain bikes suspension systems
Not that I like the subject, but there are some weapons that have sophisticated mechanisms too.
Also see Dough Chiang's work on Star Wars and Robota.

You should definitively give a look at Per Mollerup’s “Collapsibles” book, which covers pretty much all types of collapsible mechanism. All collapsible mechanism are regrouped in categories with a lot of illustrated examples. Its really a book that is oriented towards design
